When it comes to Vietnamese food, one of the most iconic dishes is pho – steaming hot beef soup with silky rice noodles, fresh herbs, and thin slices of meat. Don’t be deceived by its seemingly simple appearance – pho broth is the result of boiling beef bones for hours to create a nutritious, tasty stock and combining that liquid goodness with a complex medley of aromatics like cinnamon, cloves, cardamom, and star anise. All of these components are what give pho broth its delicate yet multi-layered flavours. While pho is most commonly served with thin slices of rare beef, which are then cooked through in your bowl from the heat of the soup, you can also find chicken pho, and, for the more adventurous, pho with beef tripe and beef tendon.

Ramen

Ramen is a quintessential Japanese soup dish – thin, wheat noodles are served in an umami broth and typically garnished with dried seaweed and slices of tender, melt-in-your-mouth pork. The soup for ramen can be made using chicken or seafood but is more commonly pork-based and involves boiling pork bones with ginger and garlic for hours on end to achieve a thick, reduced stock. The resulting soup has a lip-smackingly savoury depth to it and is not only rich in flavour but collagen as well. Representing South-East Asia is the mouth-watering laksa – noodles in a spiced soup with a coconut milk base, topped with seafood or shredded chicken, deep-fried tofu puffs, and bean sprouts. Chilli, garlic, ginger, lemongrass, and galangal are just a few of the aromatics that come together to create a complex and flavoursome soup. These spices are then balanced out beautifully with the addition of creamy coconut milk. While laksa’s origins are often a hotly disputed topic between Malaysians and Singaporeans, these days the dish can be found at a variety of different restaurants, including Chinese and Vietnamese, and for good reason – it’s delicious!

While pho often steals the limelight when it comes to Vietnamese noodle soups, bun bo hue (pronounced “boon bo way”) is definitely not a dish to be overlooked. Think of it as the spicy, tangy cousin of pho – piping hot beef soup flavoured by a zesty combination of chilli, lemongrass, garlic, and fish sauce. Unlike pho, bun bo hue is served with rice noodles that are round instead of flat and comes with various cuts of beef and pork. Its punchy flavours make it the perfect soup to slurp down when you’ve got a hankering for something hot and spicy!
