This sushi is made from cucumber and crab meat (kanikama) and wrapped with slightly grilled kingfish and topped with Shichi-mi (Japanese spice mixture), spring onions and a special Sushi Edo housemade miso sauce.

In the past, Japanese people did not eat meat, but with the modernisation of Japan, meat-based dishes are now easy to find.
